A cookie ice cream sandwich is such a simple idea and yet it's a massively underrated treat! Here we use a crisp chocolate chip cookie that will hold up against the soft ice cream. A roll in salty pretzels adds extra texture, but you could certainly use mini chocolate chips or nuts instead! Makes 30 cookies or 15 cookie sandwiches.
