What may be even better than the soft sugar cookie cup is the strawberry frosting on top. The secret for strawberry frosting is using freeze-dried strawberries. I always have trouble using real strawberries in frosting--they tend to curdle the butter! Instead, I grind the freeze-dried strawberries into a dust, add them to the frosting, and end up with a delicious, concentrated REAL strawberry flavor that doesn't compromise the frosting texture. Make 46-48 cookies.
